Appetizer Special: Caprese Skewers

I put myself in charge of appetizers and desserts on Thanksgiving this year. I was off from work the day before so I was able to bake the desserts all day, and on Thanksgiving, after my Turkey Trot 5K, I was able to throw together a few appetizers that were simple, yet quite delicious. First on the list was Caprese Skewers, and you only need a few ingredients to perfect these appetizers! Mozzarella, basil, tomatoes, and balsamic vinegar! As my family sat watching the football game, they were able to grab one or two and pop them right into their mouth! Like I said … simple, yet delicious!

Caprese Skewers 

yield: about 2-3 dozen skewers

1 pint cherry tomatoes, red or yellow
1 bunch basil leaves (about 18-30 leaves, the big ones can be cut in half)
8 ounces fresh mozzarella cheese
Balsamic vinegar, for drizzling
2-3 dozen long toothpicks/skewers


1. Slice the cherry tomatoes in half, then slice the mozzarella into bite sized chunks.

2. Slide a piece of mozzarella onto the toothpick, fold a basil leaf into half and slide it up next to the mozzarella, and finally slide a tomato onto the bottom of the skewer, cut side down (making sure the tomato is at the end of the toothpick.

3. Place skewers on plate, drizzle with balsamic vinegar, and serve.
