Chocolate Chip Cookie Dough Whoopie Pies

My boyfriend asked me to make some more whoopie pies for him and his coworkers since they had been asking … and asking … if I could bring in something again. They loved the Chipwich Whoopie Pies that I had made, so I figured I’d go with whoopie pies again, and let me tell you they were not disappointed.

Chocolate Chip Cookie Dough Whoopie Pies

yield: approx. 17 whoopie pies


for the Whoopie Pie:

1 2/3 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 tablespoons unsalted butter, at room temperature
4 tablespoons vegetable shortening
1 cup (packed) dark brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup milk

for the Filling:

1 cup butter, room temperature
1 cup (packed) light brown sugar
1/4 cup granulated sugar
1/4 cup + 2 tablespoons milk
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup mini chocolate chips


for the Whoopie Pie:

1. Preheat oven to 375 degrees F. Line two baking sheets with parchment paper.

2. Sift together flour, cocoa powder, baking soda, and salt on to a sheet of waxed paper. In the work bowl of a stand in mixer fitted with a paddle attachment, beat together the butter, shortening, and brown sugar on low speed until just combined. Increase the speed to medium and beat until fluffy and smooth, about 3 minutes. Add the egg and vanilla and beat for another 2 minutes.

3. Add half of the flour mixture and half of the milk to the batter and beat on low until incorporated. Scrape down the sides of the bowl. Add the remaining flour mixture and 1/2 cup milk and beat until combined.

4. Drop about 1 tablespoon of batter on to one of the baking sheets and repeat, spacing them at least 2 inches apart. Bake one sheet at a time for about 10 minutes, or until pies spring back when pressed gently.

5. Remove from oven and let cake cool for 4 minutes before transferring them to a rack to cool completely.

for the Filling:

1. While the whoopie pies are baking, start the filling. In a mixer, cream together butter and both sugars.

2. Add in vanilla extract and milk. Stir until combined.

3. Slowly add in flour and turn mixer up to medium until mixed well.

4. Fold in chocolate chips.

5. Fill piping or ziploc bag with cookie dough and pipe on to cooled whoopie pies.
