Cake Mix Cookies

I found this recipe on Pinterest, after searching and searching for an easy dessert recipe to make for a summer BBQ, that included plenty of family and good food. I rarely use cake batter, but I decided to give it a try because it was pretty simple and didn’t require a lot of ingredients, plus it wouldn’t melt out in the summer heat.

Cake Mix Cookies

yield: 30-32 cookies

Ingredients:

1 box french vanilla cake mix, 18.25 oz
1 tsp. baking powder
2 eggs
1/2 cup vegetable oil
1/2 tsp vanilla extract
1 cup sprinkles

Directions:

1. Preheat oven to 350 degrees.

2. In a large bowl, mix together the cake mix and baking powder. In a small bowl, mix together the eggs, oil, and vanilla. Add the egg mixture to the cake mixture, and stir to combine.

3. Stir in the sprinkles.

4. Drop spoonful onto a cookie sheet. Bake for 10 minutes. Allow to cool for 5 on the baking sheet before transferring to cooling rack.

* Cookies will be very soft at first; do not use cookie cutters just for the dough, instead do it after they’ve baked and cooled
