Dinner Special: Homemade Taco Shells & Seasoning

This was another recipe I had found, intentionally. I knew I had ground beef in the freezer, so I thought what a perfect time for tacos! I didn’t want just the store bought shells & seasoning though, which is filled with salt, but rather a more healthier version. While my parents were away, I made these lovely tacos for my brother and I, as well as our significant others. It was simple and yet delicious.

Taco Shells

Ingredients:

6-7 inch tortillas
olive oil

Directions:

1. Preheat oven to 425 degrees.

2. Take tortillas & lightly add oil to the top and bottom with a brush.

3. Warm slightly in microwave for 10 seconds, if desired.

4. Put between the cups of an overturned muffin tin.

5. Bake for 8-10 minutes.

Homemade Taco Seasoning

Ingredients:
4 tbsp. chili powder
3 tbsp. plus 1 tsp. paprika
3 tbsp. ground cumin
1 tbsp. plus 2 tsp. onion powder
1 tsp. garlic powder
¼ tsp. cayenne pepper

Directions:

1. Combine all ingredients in a bowl, and mix well to blend.  Store in an airtight container until ready to use.

2. To prepare taco meat, use 2 heaping tablespoons in place of a package of taco seasoning (cook approximately 1 lb. of beef or chicken, add 1 cup of water with the seasoning, and simmer until the liquid is almost completely gone.)
